Funny thing this morning, Oliver wanted french fries for breakfast, so I made shredded hash browns for him. Now, this is something I could've ate also but I decided not to have such a high calorie brekky and opted for an experimental option!
All of these are vegan except the breakfast because of the egg :-)
BREAKFAST: Shredded Carrot Hash
Shredded carrots
2 peppers (yellow + red)
Mushrooms
Cajun seasoning
Sunnyside up egg
Vegan Breakfast Sausage
I let the carrots and peppers really get grilled up and crunchy so that it would be similar to the hash browns I made for my son. It worked and was so good! Seasoning generously really helped too.
Snack: Seasoned Cucumber Slices
Cucumber (sliced)
Spicy seasoning
Lemon juice squeezed over them
LUNCH: Terriyaki Chick'n Salad
Vegan Terriyaki Chick'n (half package)
Butter leaf salad mix
Shredded carrots
Grape tomatoes
I wanted to show y'all that may not have ever cooked the chick'n before what it looks like out of the package. It seriously mirrors what frozen chicken strips look like! To me at this point it tastes the same too. I love love love this stuff.
DINNER: Whole Grain Wheat Pasta with Zucchini Sauce
