Food Log Day 4

Yesterday was not so great, so today I am working a little harder to get creative. I am about to use the last of any veggies I really have, so lets see how far I can get....

My washer stopped working the other day, so the next (this day) I had maintenance workers kind of in my kitchen/ entrance while I was cooking this. I can tell they were drooling because they kept whispering about it. Every time this week that they've been here fixing things I am in the kitchen cooking, so I bet they think all I do is cook!!! :P




BREAKFAST: Potato hash + tofu/egg scramble

*This can easily turn vegan if you just take the eggs out.

SCRAMBLE: 

Tofu, heavily seasoned to mimic chorizo 

1 Egg

Grape tomatos (handful)

Spinach (Opal took all the leaves off of their stems for me, it took her a while but she really felt involved!)

POTATO HASH:

Frozen shredded potatoes

3 Peppers (sliced)

Shredded Carrots

*Fry this up really crispy, it is soooo good. Season how you like. I like Spicy!



Lunch: BBQ Chik'n Salad + Buttermilk ranch

Romaine Lettuce salad mix

Vegan Chik'n cooked in BBQ sauce

Handful grape tomatoes

Shredded Carrots

Couple Croutons

Cucumber slices with seasoning

Buttermilk ranch, 1 tbsp


Dinner: Mandarin Chik'n + Fried Rice

Vegan Mandarin Chik'n 

Peppers (I sautéed these first and then added the Chik'n and then glaze, was so good.)

Minute white rice (was feeling lazy and short on time)

1 Can peas

Green onions

(I made the rice, then put it in frying pan with leftover oil from Chik'n and seasoned with asian seasoning.... then added peas and let fry.... then added onions and left for a minute and served hot.)
